Abstract: Rome is a typical example of a metropolitan area where food supply and distribution are rapidly
evolving. The city is characterized by an higher per-capita income compared to the national average,
together with a lower incidence of food on the total private household expenditure. Rome is also
one of the most expensive cities in Italy, that recently has also experienced a rather substantial increase
of food prices. The local food supply is characterized by a complex and articulated system of retailing,
where two large groups of economic operators are in place. The first group involves a large number
of small retailers, including city markets, which furnish an important but declining share of citizens.
The second group comprises a large network of supermarkets, hypermarkets and mini-markets, which
satisfies the most important part of food consumptions. However, in more recent years, short chains
have got stronger assuming many different forms, all characterized by relevant rates of development.
