Abstract: The agroprocessing industry refers to the subset of manufacturing that goes from the purchase of the raw materials, their processing and final packaging. In the past, this process used to be developed within the farms, while today industrial processes are widely spread. The aim of this contribution is to analyze the most important sectors of the Roman agroindustry at provincial and municipal level, the distribution of those industries on the territory, the new trends and the need to relaunch the sector by privileging a close link between the agricultural and the industrial phase by leveraging the wide food tradition of the Lazio region.
